Hello everyone. How are you today? I hope all is well with you and your family. This morning my wife and I were at home, We didn't go anywhere except to send our son and granddaughter to school. When I'm at home, most of my free time is spent in the home garden. I spend time with the vegetables and fruits in the home garden. I grow them only for eating. If the fruit is for sale, I will grow they in the longan orchard which is about 600 meters from my home. My wife, when she is at home. She does housework and cooks. Some of the cooking ingredients (vegetables and fruits), she harvested from the home garden. This morning too, my wife harvested purple eggplant and mango to cook two dishes. The first dish was fried stuffed purple eggplant with pork. And the second dish was mango salad. Both dishes were our lunch today.

Ingredients for fried stuffed purple eggplant with pork.
- purple eggplant
- pork
- egg
- black pepper
- corn starch
- seasoning sauce
- oil
- crispy flour
- sugar

How to cook fried stuffed purple eggplant with pork : First marinate the pork with egg, seasoning sauce, black pepper, sugar and corn starch. Then blend the pork with a blender (This step my wife made it yesterday but I didn't take a photos).
Slice the purple eggplant into pieces. And cut the center of the sliced purple eggplant.
Then stuff the minced pork inside of the purple eggplant.
Mix crispy flour with water.
Coat stuffed purple eggplant with pork with batter. Put the pan on the stove and heat the oil. Then fry the stuffed purple eggplant with pork in the pan until cooked.
It's finished, fried stuffed purple eggplant with pork.
The second dish is spicy mango salad. It can be eaten fresh or with rice. But this time is a dipping to eat with fried stuffed purple eggplant with pork. There is no spicy mango salad recipe in this post. You can see the spicy mango salad recipe in my old post.
